“W<\/span>hat’s next?”<\/p>\n

I have never dined at a place like this before. \u00a0At Grant Achatz’s Next Restaurant<\/em> in Chicago, I was enjoying my first ever Peruvian cuisine. \u00a0It was an exciting experience. \u00a0Each course was new and unfamiliar to me.<\/p>\n

The novelty and attraction of Next Restaurant<\/em> is that it is constantly re-inventing itself every three months<\/em>. \u00a0It is a stupidly ambitious idea for a restaurant. \u00a0It shouldn’t be possible. \u00a0And yet here it is doing exactly that. \u00a0The food is incredible. \u00a0The service impeccable. \u00a0You never know what they will do next.<\/p>\n

Click here<\/a><\/strong> and you can see the proof in the pudding. \u00a0Over the past 24 months, Next has been a Chinese restaurant, a steakhouse, a Japanese restaurant, a vegan restaurant, a Thai restaurant and a Parisian restaurant. \u00a0Each season they reinvent themselves.<\/p>\n

The night we dined there, it was a South American restaurant. \u00a0We had eight courses of Peruvian food. \u00a0I would recommend it to you but it has already changed into something entirely different.<\/p>\n

Another night in Chicago we went to\u00a0The Aviary\u00a0<\/em>which is another part of the Achatz restaurant empire. \u00a0The Aviary<\/em> specialises in cocktails. \u00a0But not just any cocktails. \u00a0Cocktails that are served in crazy test tube, science-lab inspired glassware. \u00a0Cocktails that light up in flames, are encased in a sphere made of ice and change colour as you drink it. \u00a0Drinking at\u00a0The Aviary\u00a0<\/em>lead to one of the most fun nights we had in America. \u00a0If you’re in Chicago you owe it to yourself to stop by and have a few.<\/p>\n

Raspadilla – chicha morada, cassia, leche. We were greeted with a tasty sorbet treat upon arrival at Next.<\/p><\/div>\n

Our night at Next Restaurant was a pleasantly casual dining experience. The tables were decorated with colourful Peruvian woollen cloths and the food ranged from artfully plated bowls of ceviche to servings like the photo above\u00a0which is ostensibly beer and snack food.<\/p><\/div>\n

One of the best surprises of the night at The Aviary was learning that Grant Achatz’ signature dish from Alinea – the Black Truffle Explosion – was available as a side dish to enjoy with the cocktails. It was absolutely divine.<\/p><\/div>\n
